Best Tuscan Butter Mushrooms.

2 tbsp butter

3 garlic cloves, minced

1 tomato paste

1 lb brown Baby Bella mushrooms, washed and patted dry

1 cup grape tomatoes, halved

½ cup heavy cream (¾ if you want to make more sauce to eat with pasta)

¼ cup parmesan cheese, grated

½ tsp Italian seasoning

¼ tsp red pepper flakes

3 cups spinach, fresh

Salt and pepper to taste

Melt the butter in a large skillet over medium heat. Mix in the tomato paste and minced garlic, and cook for about thirty seconds to a minute until fragrant

Add the mushrooms and tomatoes and cook them for about 5 minutes until tender

Pour in the heavy cream and add the grated parmesan cheese, Italian seasoning, red pepper flakes, salt, and pepper to taste. Simmer for about 3 minutes

Mix in the spinach leaves and cook until wilted. Serve warm.
