Crunchy Thai Cucumber Salad.

2 large cucumbers, chopped or sliced

3 green onions, sliced

2 tbsp roasted peanuts, chopped

For the Dressing:

4 tbsp Thai sweet chili sauce, found in the Asian isle

1 tbsp rice vinegar

2 tbsp sugar

1 dash of sesame oil

1/2 tsp salt

Combine the cucumber and green onions in a bowl, and set aside

Combine the ingredients for the dressing in a small bowl and whisk to combine. Toss the dressing with the cucumbers and onions, then sprinkle with the roasted peanuts. Keep chilled and enjoy within 2 hours.
