Bacon Cheeseburger Stuffed Mushrooms.

1/2 lb of ground beef

1 box of stove-top Savory Herb Stuffing

1 medium to large sweet onion grated on a box grater or very finely diced

2 cups grated Swiss cheese

6 slices of bacon, diced

2 tablespoons of soy sauce

1/4 cup sweet relish

12 to 15 large mushroom caps

3 eggs

1 tablespoon of dried parsley

2 teaspoons of chili powder

black pepper

Spray Oil or Melted Butter

combine your onion and stovetop stuffing mix.

In a skillet add your diced bacon, cook until crispy, and let drain on a paper towel.

carefully wipe out most of the bacon grease from the skillet using a paper towel, add the ground beef, cook fully, and break it up into a fine crumble. Drain if needed, season with a tablespoon of soy sauce, add the relish, stir to combine, and let cool.

Add the bacon and the beef mix to the stovetop mixture.

Whisk the eggs with the remaining soy sauce and the seasonings,

Add the Swiss cheese to the meat, and stuffing mix, stir well to combine, then add the eggs, and stir until all the stuffing mix looks saturated.

Add a tablespoon or two, depending on the size of the mushroom cap, to the mushrooms. Mound the mixture generously. Add to a sprayed baking sheet that you covered in foil, then spritz all the stuffed mushrooms with the oil of your choice or brush with some melted butter.

Bake at 375 degrees for about 20 or 30 minutes, until they look crispy. Serve immediately.

*You can save the mixture freeze it and add it to mushrooms later to bake off. You can also use this mixture to top chicken or pork and bake.
