3-4 slices thick-cut bacon
3/4 cup diced onions
12 ounces fresh hash browns-a little more than half of the bag
Sprinkle salt and pepper
Dice bacon and cook over medium-high heat
Add diced onions and cook until lightly brown
Add hash browns
Add butter and salt and pepper
Flip hash browns frequently while cooking over medium/medium-high heat
Hash browns are done cooking when they are crispy and brown
Tips:
Use frozen diced onions. They are super convenient and really easy to use instead of fresh onions
Use fresh hash browns instead of frozen ones. They keep their shape better and are cool more evenly
Adjust the amount of butter used based on the fat content of your bacon. The hash browns will “fry” in the bacon grease but will need some butter to cook evenly.
Make sure the bacon and onions are cooked and lightly brown before adding the potatoes.
